If it wasn’t for recognizing her handwriting, I wouldn’t know which recipes were from Mother or someone else. This one is hers. Did I tell you she was a great cook? Mother was a registered nurse. When she was at work, Grandma Matteson (her Mother) did the cooking. I’ll have more of Grandma’s recipes later. Stay tuned.
2 C Milk
3/4 C White Sugar
1/2 Cup biscuit mix
4 Eggs
1/4 C Oleo
1 1/2 t vanilla
1 C Baker Angel Flake Coconut
Combine first four ingredients in electric blender. Cover and blend on low speed 3 minutes. Pour into greased 9 inch pie pan. Let stand 5 minutes then sprinkle with coconut. Bake 350 deg. for 40 minutes. Serve warm or cool.
