Amazing Coconut Pie

If it wasn’t for recognizing her handwriting, I wouldn’t know which recipes were from Mother or someone else. This one is hers. Did I tell you she was a great cook? Mother was a registered nurse. When she was at work, Grandma Matteson (her Mother) did the cooking. I’ll have more of Grandma’s recipes later. Stay tuned.

2 C Milk

3/4 C White Sugar

1/2 Cup biscuit mix 

4 Eggs

1/4 C Oleo

1 1/2 t vanilla

1 C Baker Angel Flake Coconut

Combine first four ingredients in electric blender.  Cover and blend on low speed 3 minutes.  Pour into greased 9 inch pie pan.  Let stand 5 minutes then sprinkle with coconut.  Bake 350 deg. for 40 minutes.  Serve warm or cool.

Although I haven't done many photos of people, I've found there are photo challenges in every direction. Born and raised in Michigan, the peaceful woods and wildlife have always attracted me. Graduating from high school in 1953, college was of no interest to me. My Dad used to say, "some folks get a college education and may still not have enough sense to come in out of the rain." That's always been enough for me because I do, have that much sense, about the rain. I have learned one important fact about life. Old isn't as old as I always thought it was.
