Crunchy Rhubarb Cake

This one is written in longhand on a piece of paper. There’s no name so I can’t give credit to anyone. I’m going to post it just as it’s written.

Cream 1 1/2 cup sugar & 1/2 cup shortening. Add 1 egg & beat. Mix in 1 cup sour cream or buttermilk, 2 cups flour, 1 tsp. soda, 1/4 tsp. salt, 1/2 tsp vanilla. Add 2 cups diced rhubarb to batter. Mix well. Pour batter into a 9 x 13 greased pan. Combine 1/2 cup sugar, 2 tsp. cinn. Sprinkle over batter. Bake at 350 deg for 30 min

Delectable Chocolate Chip Cookies With Rice Crispies

You’re on your own here. Doesn’t sound difficult, let me know how it turns out.

Beat until well blended (the following);

1 cup Oleo

3/4 cup White Sugar

3/4 cup Brown Sugar

Add 2 Eggs, 1 tsp Vanilla/Beat well

Add dry ingredients and mix.

Stir in 2 cups Rice Krispies and 1 cup chocolate morsels.

Drop by level tblspoon on greased baking sheet

Bake @ 350 deg – 10 minutes or until lightly browned

Cool 1 minute..then remove to wire racks

Makes 6 dozen 2 1/2″ cookies

You’re on your own here. Doesn’t sound difficult, let me know how it turns out.

Stir together and set aside: 1 3/4 cups flour, 1 tsp Baking Soda, 1/2 tsp Salt

 

Beat until well blended (the following);

1 cup Oleo

3/4 cup White Sugar

3/4 cup Brown Sugar

Brer Rabbit Gingers

Yields 8 dozen

2 Cups Molasses

1 Cup Sugar

2 T Cider Vinegar

2 T Ginger

1/4 t Nutmeg

4 t Soda

1 Cup Shortening

1 Egg

7 Cups Flour

1 1/2 t Cinnamon

1 t Salt

Cream together shortening, sugar. Add egg, beat well. Add molasses and vinegar. Sift together flour, spices, soda, and salt. Add to creamed mixture. Add 1 cup boiling water. Mix well. If necessary add more flour to make a soft dough. Drop by teaspoons on greased baking sheet. Bake in moderate oven @ 350 degrees 10-12 minutes.

An old friend named Fran gave me this recipe. All I remember is the cookies were good and Fran was a bowling buddy of mine. Those were the days. Yes, they were.

Amazing Coconut Pie

If it wasn’t for recognizing her handwriting, I wouldn’t know which recipes were from Mother or someone else. This one is hers. Did I tell you she was a great cook? Mother was a registered nurse. When she was at work, Grandma Matteson (her Mother) did the cooking. I’ll have more of Grandma’s recipes later. Stay tuned.

2 C Milk

3/4 C White Sugar

1/2 Cup biscuit mix 

4 Eggs

1/4 C Oleo

1 1/2 t vanilla

1 C Baker Angel Flake Coconut

Combine first four ingredients in electric blender.  Cover and blend on low speed 3 minutes.  Pour into greased 9 inch pie pan.  Let stand 5 minutes then sprinkle with coconut.  Bake 350 deg. for 40 minutes.  Serve warm or cool.

Mom’s Macaroni and Cheese

One of my Mother’s favorite casserole recipes. She had many. Written in pencil on the back of a place mat, it’s in her handwriting. Seeing her handwriting is precious to me. It isn’t fancy, but it’s good if my Mother is sharing it.

8 oz  Macaroni

3 T  Oleo

2 C  Milk

2 T  Cornstarch or flour

1/4 C  Grated Onion

1/2  t  Dry Mustard

1/4 t  Worcestershire Sauce

1/4  t  Salt

1/8 t  Pepper

8 oz  Grated Cheddar Cheese

Cook macaroni. Drain and place in buttered 2 qt casserole.. In sauce pan melt butter, saute onion, stir in flour.  Slowly add milk until thickened. Add spices, cheese, stir until melted.  Pour over macaroni, sprinkle with crumbs.  Bake at 350 deg 30-40 minutes. (She didn’t say what kind of crumbs. You’ll have to figure that out for yourself.)
